A visit to Nakiryu (1 Star Michelin) in Tokyo to have Japanese Ramen and some side dishes, namely Tantanmen, Sanramen, Yodare Dori and Shrimp Wantan. The restaurant doesn't accept reservations so it is almost guaranteed that you get a seat as a walk-in customer - unless you pass out in the heat or give up while waiting in line - in Tokyo there are only three Michelin starred Ramen restaurants. This is a day in the life of a Japanese Chef, Tetsuya, 41 years old, working in Japan at a ramen store, karashibi miso ramen Kinkanbo. It's a popular spicy ramen shop in Tokyo Japan serving a devil ramen. We see Japanese working hours as well as Japanese workers in a Tokyo ramen restaurant, a peek into Japanese life. Tetsuya starts the day in his apartment and as an average Japanese worker, he commutes to work in Tokyo via train. It only takes him 20 minutes to get to work, but soon after arriving, he's busy working at the Japanese food restaurant and preparing Japanese ramen noodles for customers. His main duty is the manager of the ramen shop, but he also creates new gentei limited time menu items as a Japanese ramen chef. Life in Tokyo is amazing and part of this is because we have dedicated workers in Japan that keep the city running. To be a Japanese chef you must really have a passion for what you do. This hole in the wall, through the corridor, would never know it even existed, hidden Japanese ramen shop is exactly why I love doing these videos. The shop was originally opened in Shizuoka and relocated to Ebisu at the start of 2021. The shop had a fairly quiet start but quickly picked up a reputation and these days more often than not has a line out the door. The shop uses a special blend of 5 unique kinds of miso paying careful attention to not add heat until just before combining it with the soup to preserve the miso’s flavor, a distinct saltiness paired perfectly with the sweetness from the pork back fat creating their signature bowl of ramen. The shop uses noodles from Kaikarou, a specialized Asakusa based noodle producer. The noodles itself are made from a blend of 2 types of flour and Tapioca to create its characteristic spring texture and sweetness, pairing perfectly with the shop’s strong and rich miso soup. Today we’re going on a Japanese food tour to try some of the most popular noodles dishes. #1 Hakata Ramen (Tonkotsu) - There’s no doubt this is one of the most important noodles dishes of Fukuoka, and one of the most famous versions of ramen in Japan - tonkotsu ramen or locally known as Hakata ramen. We went to an old school spot that hasn’t changed in decades. It was one of the best bowls of tonkotsu ramen I’ve ever had. Hakuryuken 🤍 Price - 1,150 JPY ($8.68) #2 Udon - Next up for udon, another Japanese noodle classic. Udon is thick and hearty. We went to a very well known udon restaurant in Fukuoka, and actually you can order from three different sizes, yet they each cost the same amount, and depending on hours (in the afternoon when we came), you can get unlimited re-fills of noodles - so it’s all you can eat udon! I had the hugest bowl possible and it was at least three normal bowls of udon. I was pretty full after eating it all so I didn’t need more! Shungetsuan Shotenjimae: 🤍 Price - 800 JPY ($6.04 all you can eat udon noodles) #3 Champon - The last dish is champon, especially famous from Nagasaki, south of Fukuoka on Kyushu island. It’s a totally different noodle dish concept where a heap of vegetables are stir fried and then topped like a mountain on top of noodles with thick pork bone broth. It looks huge, but goes down quite easily as it mainly consists of bean sprouts and cabbage. They have two shops, the one of the corner serves only Tsukemen, a style of Japanese ramen where the noodles are dry and you dip them in the sauce. For the traditional bowl of ramen, you walk around the corner to the side and that’s the shop you’re looking for. Like most ramen restaurants in Tokyo, you enter to a vending machine and choose your bowl of ramen, pay and get a ticket. There are two different spice levels to choose from, chili 1-5 and Sichuan pepper 1-5, 5 being the strongest which is called Devil Level! I decided to go Devil Level all the way, both chili and Sichuan pepper. Price - 1500 JPY ($13.60) for my bowl. From the top bowl, you pay an extra 200 Yen due to adding so much more spices. First of all, the Japanese food miso ramen was outstanding, the flavor of the broth was incredibly delicious. On my first bite, what hit me hard was the Sichuan pepper, that made my mouth start tingling and made it hard for me to control my mouth or even talk! The Devil Level chili was not too bad for me, but it was the huge amount of Sichuan chili that almost did me in. You don’t have to order Devil Level, you can order whatever level you like, but the ramen at Tokyo’s Karashibi Miso Ramen Kikanbo is sure to blow you away with insane flavor! One of the most famous global ramen chains originating in Fukuoka is Ichiran, and today we are going to go eat at the original, the headquarters! Ichiran 一蘭 本社総本店: 🤍 Along with serving Hakata style Fukuoka ramen, there are some very unique things about eating at Ichiran. First is that they have a full checklist system where you can decide and customize your bowl to your liking - everything from how rich the broth will be to how chewy the noodles will be and the spice level you’d like, plus additional topping and additions. Next, Ichiran Ramen is famous for their dining room style where you have your own personal ramen booth so you can eat and enjoy your bowl of ramen all by yourself without any distractions.
