You can block xp from getting gained in specific skills by talking to Nastroth in lumbridge.

Pretty hyped for this series!! I'm going to have to finish the video later so I'm not sure if you discover this but if you speak to Nastroth in lumbridge he gives you the option to disable xp gain in any skill you want which would negate any accidental level ups and opens a lot of content up. You could do the Anima Islands minigame if you block xp in the related non combat skills to get a hybrid armor set that progresses up to tier 75
